      Both my husband and I loved this! I didn't have refried beans, so I had to do without them...I will be making this many more times though so I'll have to try it with them. This was so delicious and easy. Thanks for the keeper!

      I made these ages ago and I thought I rated them. These were ok, my niece enjoyed them, I would make them again probably but leave the beans out, for me they overpowered the enchiladas. Thanks for sharing the recipe.

      I thought I reviewed these already, but guess not! they were fantastic! I made mine with light sausage, light cream cheese, and ommitted the refried beans/onions and cut down on the cheese. they were so velvety good, exactly as described. will definitely make again, probably with the turkey sausage as another reviewer suggested. thanks for a wonderful keeper!

      I have been waiting to make these for a long time. I finally got to, and was thrilled with them. We left off the refried beans-my brother is a renal patient and cannot eat beans (no one else much likes refried anyway)and they were great. I added the minced onions while I browned the sausage. However, I used 2 pkgs of like Jimmy Dean sausage (24 oz.) and two cans of Rotel, drained, for 18 tacos (1/2 of which were carb-right ones)I only used about 3 cups of cheese, didn't seem to need any more. Some of us thought 4 stars, but some thought 5. I thought 5 and since I was the cook, I get to rate. They did come out a little crispy, but I loved that. Thanks!

      These are absolutely delicious! Creamy, cheesy goodness! I used Jimmy Dean's hot sausage and added 2 T minced garlic with the onions while browning. I made these for dinner last night and shared the leftovers with 2 of my colleagues. They both loved them! Thank you for sharing this wonderful recipe, Vicki! Into my "Tried and True" cookbook it goes. :)

      Hi Vicki...the filling is so yummy! We found these to be more like burritos than enchiladas because there's no sauce on top. With light turkey italian sausage, light cream cheese, fat free refried beans, fewer light tortillas and only 3 1/2 cups of light cheese these were still great.
