I've tried many different hummus recipes before but this one is the absolute best!!! We love love love garlic...the hummus had so much flavor and was so light and creamy! It was very similar to the store bought sabra brand hummus without all of the preservatives. Served with wedges of toasted flatbread. Will definitely be making this one again!

This is amazing! Will make again and again! Hummus is so easy to make, and so much more delicious when you do, I don't think we will every buy it again.

I doubled this recipe for a party and had to add 4 Heads of Garlic to get a really garlicky taste. Next time I'll cut the Tahini and omit the water. Thanks!

I made a double batch of this over the weekend and it's almost gone already! I served it with fresh pita chips & carrots for Monday Night Football. It was a hit. :) I found it very easy to put together. I tried to be gentle with salt, but for my taste it could have used more. This is now a permanent part of my recipe collection. Thanks so much for sharing!

After a very long search I finally found what I needed. This was GREAT! Perfect consistency and really great flavor with the tahini and roasted garlic. This will definately be the only recipe I use from now on.

Oh Yum!!! I have had many variations ~ homemade, store-bought and at restaurants) and this one is my favorite by far! This recipe has the perfect blend/ratio of beans, tahini, lemon and that beautiful, mellow roasted garlic! I followed the recipe exactly except for the olive oil. I blended everything together in the food processor and then, while it was still running, poured just a small stream (maybe 1 tablespoon) of oil to smooth it out. Along with the warm water, it really did not need any more. A little lemon pepper sprinkled on top and some toasty pita wedges made for hummus bliss... Thank You!

I thought this recipe was wonderful. I make hummus all the time and this far exceeded my usual recipe. I loved the nutty taste that the roasted garlic gave. I made a double batch last time and can confirm, after trying the second one, that it freezes brilliantly. virutally no loss of texture/taste. Thanks

This is a great recipe! It's super easy and can stand with a few substitutions if need be. I used concentrated lemon juice one time and it tasted just as good. The only suggestion I would make is to let the flavours gell in the fridge for awhile before serving. It tastes much better after a couple of hours!

I loved this recipe. Nice and smooth. I have made it twice. Once with the roasted garlic, once with just 2 cloves unroasted garlic. Both were good, but the "unroasted" version packs a bit of a whollop! Be prepared to ward off vampires! I prefer the lovely roasted flavor. To serve I sprinkled on paprika and pine nuts. Next time I am going to reduce the liquid and add some canned roasted pepper. I bet that would be really good. My kids love this stuff (and I love that it is so GOOD for them!)

Very nice hummus. Your method for roasting the garlic worked perfectly. Mine was the perfect consistency made in my blender. I didn't have to add any extra liquid. This was a tad lemony...I suppose it depends on the size of your lemon. I served it with crudites and pita bread. Made for 1-2-3 hit wonders.

I love hummus and make it all the time and I also love garlic but had never tried to roast it before. This hummus was absolutely delicious! The garlic was mellow instead of sharp, yet still flavourful, which was really nice with the other flavours from the tahini and lemon juice. I didn't add any olive oil for personal preference, yet my hummus was still nice and creamy with just the 1/4 cup water. I'll definitely be making this again!! Thanks so much!

Very nice hummous! I did have to add considerably more olive oil to get it to "move" in my Magic Bullet for, despite scraping the sides, the mixture would climb the cup walls immediately upon restarting. Was I not supposed to drain the chick peas? I also added an extra raw minced garlic clove for our tastes, but that's probably because the head of garlic I roasted was pretty small and didn't provide as much flavor as I'd like. This additional clove gave it a bit of a kick, but it was just delish! I topped the hummous with more olive oil and some paprika and served with warmed pitas, Lebanese Chicken and Tabule (Arabic Salad) - Tabbouleh. Thank you, What's Cooking?!

I've never made hummus before, and this was really easy and very tasty. I did substitute kosher salt for sea salt, but otherwise stuck to the recipe exactly. This will be on my appetizer table for all my dinner parties.
