Creamy Quinoa Pudding

The World Health Organization has rated the quality of protein in quinoa at least equivalent to that in milk.   • Mix quinoa, soymilk and salt together in a saucepan and bring to a boil.
  • Cover and simmer for 20 minutes.
  • Add sesame butter and barley malt and mix well.
  • Add kudzu or arrowroot and stir constantly until mixture thickens.
  • Add vanilla and spices.
  • Top with your choice of nuts or fruit. Delicious warm or chilled.

  1. Like another reviewer, I tried to sub peanut butter for the tahini, but next time it will be worth getting the right stuff. I added the honey, then a bit more Splenda to sweeten this more for the kids and my husband. I quite enjoyed this, and my 2 year old gobbled up a ton of it, but the boys in the family didn't care for the quinoa itself. My husband doesn't like the "earthy" grain flavor, so I might toast it next time I try this. Thanks for sharing, as I'm trying to find different uses for the impulse bag of quinoa I picked up with no idea how to use it!
     
  2. This was a yummy treat. I used peanut butter instead of tahini, and I used the honey option. Like a previous reviewer, I found it unnecessary to add kudzu or arrowroot. After tasting, I added a LOT more honey and cinnamon to give it the flavor I wanted. I normally don't like things too sweet, but the quinoa has a very distinct taste that I think calls for a lot more sweetness to balance it out. After I got it how I wanted it, I found it to be a delightful alternative to rice pudding. And I never would have thought of it on my own (although I love quinoa), so thank you for posting.
     
  3. This is so good! I love the nutty taste of quinoa and it worked great in a pudding. I love rice pudding, but I hardly ever make it because it's so unhealthy what with the cream and sugar. I used 1% cow's milk and found I didn't really need the thickener, but I used it anyway. I didn't change anything else. It tastes so healthy yet so satisfying, I ate it for breakfast a couple of times. Thanks for the awesome recipe!
     
  4. This was my first attempt at using quinoa-turned out nice! I made an eighth of the recipe & it only took about 1 min to cook since it was such a small portion. I found that the cornstarch & water weren't really neeeded; it was thick enough for me already. I used cinnamon & applesauce for the butter-topped with some banana. It smelled kind of "grainy" cooking but it tasted good!
