Creamy Pumpkin Fudge

"Simply the BEST fudge I've ever had, light and melt-in-your mouth texture, rich but not too rich flavor, and beautiful light orangish-cream color. You will be in heaven when you bite into one of these incredible squares. These are from my Great Aunt Triplett."

  • Bring margarine, sugar, and milk to a full boil in a heavy 4 quart cooker, stirring constantly. Boil 5 minutes over medium heat.
  • Remove from heat, gradually stir in chips until melted; add marshmallow creme, stirring until well blended. Add pumpkin, vanilla, and pumpkin pie spice.
  • Beat until well blended and pour into a buttered 13 by 9" pan. Cool in refrigerator overnight to firm it up a bit.
  • The next day it will still be a bit too soft, so cut into 1 inch squares and put onto another pan to air dry, turning every once in a while, for a day.

  1. I am so sorry to say that this was just awful! What a dissapointment!!!!!! I was so excited to make this recipe today that I purchased a candy thermometer, candy cups & candy boxes. I began early and followed the recipe exactly as printed. It has been 6 (six) hours and this fudge is still not at all set. I told co workers that they would be getting some homemade fudge the day after Thanksgiving & they were happy. This is an embarrasment and this is the first recipe from recipezaar that was a flop. It was a waste of my time, cost of ingredients, and effort. I would recommend that you go to another recipe. Again, sorry but I must be honest and let other cooks & bakers know my poor results of this recipe.
     
  2. I used this recipe to make fudge for the first time. The recipe was easy to follow and produced very unique fudge. I substituted the marshmallow cream for about 1 cup of marshmallows. Also I made one batch with white choc chips < not sure what vanilla chips are> and another batch with choc chips. The fudge hardened quite fast which was also great. I did cook the fudge a little longer than suggested by this recipe also.

I love baking best of all, especially breads and cookies, and I'm always looking for new bread recipes to try. I also enjoy recipes using fresh fruits that are refreshing and not overly sugary. I am very sporty and active so I like foods that give you a lot of energy with good nutrition too.
