Creamy Pudding Treat

"I was constantly buying those pre-made, individual pudding cups to throw in my lunches and was, consequently, spending way too much money for 4 ounces! I'm on a tight budget and have a really hectic schedule, so I figured bringing my own instant pudding cups would be my best option. After a little experimentation, I came up with a quick, ultra-creamy creation that puts the store-bought cups to shame. This recipe is beyond simple and easily adaptable...just add whatever pudding flavor you're in the mood for at the time! I've used fat-free/sugar-free ingredients, but that is obviously completely optional. Enjoy!"

  1. Just made this with 1/3 less fat cream cheese and, what else but CHEESECAKE pudding mix. To die for!! I think I will dip graham crackers in it tomorrow for dessert :)

  2. Yummy!!! This was a delicious treat. A little more work than store bought pudding treats but very delicious and creamy. So far I've only made chocolate but, is there really another flavor :). Made and enjoyed for PAC, Spring 2009

  3. This was amazing - the pudding turns out so rich and creamy you would never guess it's fat free. Edited to add that so far we have done this with vanilla, chocolate, and white chocolate pudding. The vanilla and white chocolate taste even better after they've been allowed to sit for a day (they have a definite cheesecake flavor that is delicious!)

  4. An excellent easy treat! The smooth creamy texture is great. In the past I have made sugar-free pudding w/fat free milk and it always separated & got watery in the fridge. The cream cheese eliminates this problem, it now keeps its creamy consistency! A variation I tried & liked: add a few drops of almond extract when doing chocolate pudding.

  5. This is a great recipe. I made it for my boyfriend last night. He loved it! It's delicious and I didn't miss the sugar or the fat!
