Excellent potato salad and so easy! I made a few changes because I was out of some of the ingredients--instead of bacon I used artificial bacon bits and I eliminated the celery. I also ran out of mayonnaise and used about 1 cup of mayonnaise and 1/2 cup of low-fat sour cream. The only other change I made was slicing the hard-boiled eggs instead of chopping them. Even with my subsitutions this salad was excellent and will definitely be making it again this summer.
Very good and easy. I have never made potatoe salad before, this recipe was easy to follow, and it is stuff that you would normally have on hand. Thank You Faith
This has to be the best potato salad I've ever had.
Delicious! Whipped this together in less than an hour. Very creamy texture. I cut my potatoes before boiling so they cooled much faster. An excellent recipe to use up the ends of celery.
Just Made it last night AWESOME! Everyone got up for seconds on the potato salad. Took a little long to make/prep but well worth the wait.
I don't like potato salad. That said, I got thinking, maybe it is because I never had good potato salad. A quick search and I found this 5 star recipe. I figured I would like potato salad if I found a good recipe and made for it myself. I made exactly as written. Excellent potato salad. This has a nice depth of flavor. Many people who make potato salad mix a bit of mayo with some potatoes and a couple other things and think that is all that is needed (i.e. my sister- yuck- you really are not the great cook you think you are). This is great. Better than I expected- and I expected a lot given the 5 star review out of 200+ reviewers.
This is a patato salad for people who don't like patatoes. If you like the TASTE of the patato itself, you'll be disappointed like I was, because it gets "drowned" in the dressing.
OML - Who in their right mind would NOT give this 5 stars?? I actually didn't have all the ingredients on hand, so... instead of bacon used garlic sausage, instead of celery - used red capsicum! I also used 3 eggs instead of 2 and didn't add the salt or celery!... I have 9 mammoth potatoes so used 2 cups mayonaise and 3 teaspoons mustard. Whilst I found 1/3 cup sweet relish, think I will need to exhaust that of making my own sweet relish as this is unequivocally my 'go to' potato salad... thanks so much for sharing this recipe. I will be making this for a group of 12 and I think hands down this will be a recipe I will be sharing.
My new go-to potato salad for all family gatherings!! The taste is awesome (I think it's the love in the bacon). I admit, though, that I only used 3/4 of the dressing - I always use less dressing than most recipes call for. Thanks for sharing.
I have made this a couple of times, with and without the bacon. I like with out the bacon better, it`s excellent !! I was looking for a potato salad recipe, like Mom used to make, this is it (omitting the bacon)!! I find it`s best to make it the day before the event, for all the favors to mingle. If you are using a super starchy potato, like a russet, you will have to increase the mayo. I like to use a less starchy potato. And I did increase the celery, by a 1/3. Great recipe Karen.
