This recipe is taken from a cookbook issued by the ladies of Providence Baptist Church, Oxford, NC, in 1999. It provides an excellent method for using leftover mashed potatoes.

So easy and delicious! I halved the recipe since I didn't have enough potatoes. Very clever idea to layer ingredients over the potatoes - sour cream, green onions, bacon, cheddar - perfect toppings for potatoes and the taste is scrumptious. Thanks for sharing!

  1. Preheat your over to 300°F In a flat bottomed baking dish spread out the mashed potatoes to cover the bottom of the dish. Top these with the sour cream. Sprinkle over the crumbled bacon and the green onion, then top with the shredded Cheddar cheese. Bake for 30 minutes or so.
