This was a delicious meal. The pan gravy was great over basmati rice, too. I used a standard yellow onion, and I think it worked well in this dish. Caramelizing the onions was a great addition, because it added a depth of flavor that would have been lost if all I had done was slice the onion and top the pork with them, and then continue cooking.
