      This was a delicious meal. The pan gravy was great over basmati rice, too. I used a standard yellow onion, and I think it worked well in this dish. Caramelizing the onions was a great addition, because it added a depth of flavor that would have been lost if all I had done was slice the onion and top the pork with them, and then continue cooking. Yep, caramelizing is the way to go! We really enjoyed this dish. Thank you for sharing your recipe MollyLin. Made for "New Kids On The Block" tag game.
