I found this recipe in an old Southern Living Cookbook. My FIL loves Pina Coladas and I wanted to surprise him. They were a hit.
- 8 1⁄2 ounces cream of coconut
- 8 ounces crushed pineapple, undrained
- 1⁄2 cup coconut
- 1⁄4 cup light rum
- 1⁄4 cup milk
- 1 tablespoon powdered sugar
- Combine all ingredients except for ice in a blender.
- Pulse until well blended.
- Add ice cubes until you reach the desired consistency.
