  1. Dissolve gelatin in boiling water.
  2. Add ice cream and stir until melted.
  3. Combine milk and pudding mix in small mixer bowl.
  4. Beat at low speed for 2 minutes.
  5. Add gelatin mixture; whip until fluffy.
  6. Fold in non-dairy whipped topping.
  7. Spoon into pie shell.
  8. Chill about 2 hours.
  9. Garnish with additional whipped topping and peach slices.

Tis was very simple to make, and very good. This is a great pie for those long hot Florida days..I'll be making this one all summer!
