Oh, a very delicious dish. DH loved it, and it was so very easy to make. Great side with roasted chicken. Made for Fall 2008 PAC.

Ingredients Nutrition

  • 1 onion
  • 2 teaspoons oil
  • 1 12 cups rice
  • 12 cup apple juice
  • 1 12-2 cups stock
  • 12 teaspoon salt
  • 14 teaspoon pepper
  • 2 cups frozen peas
  • 12 cup parmesan cheese


  1. Chop onions. Put in medium pot and saute over medium heat until translucent.
  2. Add rice and stir for one minute.
  3. Add apple juice, 1 1/2 cups stock, salt and pepper. Bring to a boil, then reduce heat to medium-low. Cover and cook 15 minutes.
  4. Stir in peas and Parmesan, adding more stock if needed, until creamy.
