Elegant and easy! It's easy to keep all the ingredients on hand.
- 1 onion
- 2 teaspoons oil
- 1 1⁄2 cups rice
- 1⁄2 cup apple juice
- 1 1⁄2-2 cups stock
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 2 cups frozen peas
- 1⁄2 cup parmesan cheese
- Chop onions. Put in medium pot and saute over medium heat until translucent.
- Add rice and stir for one minute.
- Add apple juice, 1 1/2 cups stock, salt and pepper. Bring to a boil, then reduce heat to medium-low. Cover and cook 15 minutes.
- Stir in peas and Parmesan, adding more stock if needed, until creamy.
Oh, a very delicious dish. DH loved it, and it was so very easy to make. Great side with roasted chicken. Made for Fall 2008 PAC.
