Creamy Pasta with Cheese

Not very pretty, but really yummy! From The Goldbeck's Short-Order Cookbook.


  1. Bring a pot of water to boil, salt lightly and cook pasta till al dente.
  2. Drain.
  3. Return to pot, add butter and toss over low heat till butter is melted and coats pasta.
  4. Stir ricotta and yogurt in and gradually add parmesan, stirring continuously until sauce is warm and cheese melts.
  5. Sprinkle with pepper.
