This made a very nice, quick, meatless dinner. Very tasty. I used spinach and cheese tortellini, as suggested. I used creminis, but would be good with other types of mushrooms, too. Made for tag game at

  1. Melt butter in a frying pan over medium heat. Add onions and mushrooms and cook while stirring until mushrooms are soft, about 4 minutes.
  2. Stir in stock, cream and black pepper to taste, bring to a gentle boil and simmer for 6 to 8 minutes or until sauce reduces and thickens slightly.
  3. Toss with your choice of pasta, sprinkle with parmesan cheese and serve.
