  • In a medium saucepan, boil water. Add macaroni and cook 8 minutes; drain.
  • In a glass or microwave safe dish, melt butter for 30 seconds. Blend in flour and salt.
  • Stir in milk until smooth.
  • Microwave 2 minutes, stirring with a fork after 1 minute, until thickened.
  • Stir in cheese until completely melted.
  • Pour well drained macaroni into cheese sauce, mixing well.
  • Microwave at medium-high heat for 3 minutes.
  • If desired, sprinkle top with bread crumbs before serving.

  1. My wife';s highest praise for a meal is, "you can make this any time." She usually save this comment until her plate is cleared. For this mac and cheese she told me after her second bite. Easy and delicious? Yes, this is good stuff. I sometimes double the cheese, because, well, cheese.
     
  2. I'm not a mac and cheese fan, and I thought this recepie tasted very good, and was quite easy to make. The breadcrumbs are a fantastic addition! I added some cooked, shredded chicken breast to the mac and cheese to make it a full meal, and it is also very good.
     
  3. I love this Mac & cheese simply because I like my M&C creamy rather than eggy. Also, it is fast and makes a smaller amount. Now that it is only two of us it is perfect. I have started making this stovetop. It is a little too floury made in the microwave even after cooking the flour for a minute or so. I made this the other night using Cabot Seriously Sharp Cheddar making it over the top good.
     
  4. I didn't care for it. Too bland and floury. Tried to tweak it and ended up throwing it out. Im glad it was a small batch. Sorry...
     
  5. This recipe is amazing! I have made this a LOT! Although I found microwaving the roux for a minute before adding the milk takes away the raw flour taste. If you have some laying around, add a 1/2 lb of cooked smoked ham or smoked brisket chopped.....it may put you in a food coma.

Tweaks

  1. I turned my oven on to the self-cleaning cycle and so I couldn't use it to cook dinner. I found this recipe and still was able to enjoy a delicious dinner. I made my macaroni in the microwave and also added two slices of bacon. Instead of milk, I used evaporated skimmed milk, which made it a bit too thick, so I had to add extra to get the right consistency. I also added a touch more cheese. Overall, I was very pleased with how creamy this was for the little effort I put into it. Yum!
