Creamy Ham & Broccoli Hash Browns Casserole

"a creamy, one-dish casserole that satisfies even the pickiest eaters. i developed this from a plain hashbrown casserole side dish recipe in one of my weight watchers cookbooks. i usually serve this with applesauce and green salad. the leftovers are great the next day for lunch. for anyone else on ww, each serving is 4 points."

directions

  • preheat oven to 350 F stir together hashbrowns and cheese in a large bowl add pepper and melted butter.
  • mix well.
  • add brocolli and ham.
  • stir to mix.
  • add sour cream and cream of mushroom soup (undiluted).
  • stir until all ingredients are well mixed.
  • spoon mixture into a 9x13 inch baking dish coated with cooking spray.
  • sprinkle evenly with paprika.
  • bake at 350 for 1 hour or until bubbly.

  1. I thought this was a good starter recipe. The only change I made was using cream of broccoli soup instead of cream of mushroom. Next time I will add more ham and broccoli and less potatoes; maybe add some chopped onion. Also, this makes makes a lot.
     
  2. This was very good. I made it as written and it made a very big casserole. I froze 1/2 of it and forgot about it and found it several months later. I heated it up in the microwave and it was still delicious. I will definitely make this again.
     
  3. I loved this- I used to make a similar casserole using much higher-fat ingredients (mayo, tons of cheese, etc). It's a great blend of potatoes (I used the diced hash browns) and ham. Next time I will definitely add more broccoli- two cups isn't much in this big casserole. This would be good for breakfast, too. I served this with toasted rolls and salad for a declicious meal that I'm sure I'll be making again. Thanks!

life has changed alot for me since i first registered at recipezaar... ive recently relocated from canada to a small island in croatia where ingredients are hard to find and cooking is more of a challenge - but i am definitely up for it. looking forward to experimenting with new flavors and local ingredients. i might be quiet here, but i am a regular user and appreciate the plethora of recipes and advice i know i can always count on.
