This dressing turned out to be just fair. I couldn't quite put my finger on why I couldn't rave about it, and think it was the tomato paste and the large amount of olive oil. This could just be my own personal preference. I want to try it again with less oil and perhaps substituting fruit sweetened catsup for the tomato paste. The texture of the dressing was nice and I liked the fresh garlic taste.

Ingredients Nutrition


  1. Process all ingredients EXCEPT OIL in a blender or food processor until smooth.
  2. With machine running, slowly pour in oil until mixture is thickened and blended.
  3. Pour into bottles or jars.
  4. Cover tightly.
  5. Shake before using.
