Creamy Double Mashed Potatoes

This is a delicious side dish for any dinner - so good with a roast beef!!

Ingredients:

Servings: 6

• 1 lb sweet potato , peeled cut into chunks, about 3
• 1 lb red potatoes , peeled cut into chunks, about 3
• ¼ cup philadelphia cream cheese spread
• ½ cup chicken broth (less-sodium)
• 4 slices bacon , cooked, crumbled

Directions:

1. Cook potatoes in boiling water in large saucepan, 15-20 minutes or until tender; drain. Return potatoes to pan.
2. Add cream cheese spread; mash potatoes just until cream cheese is blended. Gradually add broth, continuing to mash potaotes until of desired consistency.
3. Stir in bacon.

Overall this was a good recipe but I needed to doctor it up by adding some salt and extra cream cheese because it was originally pretty bland. However, the finished product was definitely 5 stars. Thanks for posting. Made for New Kids on the Block 2010.
