    Ingredients:

    Directions:

    1. 1
      Wash and peel potatoes and cut into uniform pieces.
    2. 2
      Cover with water and season water with salt.
    3. 3
      Bring to a boil, cover and simmer until potatoes are soft when tested with a fork.
    4. 4
      Drain water, cover potatoes so that excess moisture is absorbed in pot after draining.
    5. 5
      When potatoes are 'dry', mash with potato masher while adding the butter and sour cream.
    6. 6
      Mash til smooth consistency, then add finely minced garlic and parsley.
    7. 7
      Stir in salt and pepper to taste as well as green onions.
    8. 8
      Perfect as topping for my Sheperd's Pie!
