Creamy Cucumber Falafel Dressing

"Very lite for a hot summer day, works great as a veggie dip aswell."

• Ingredients: 6
• Yields: 1.25 cups
• Serves: 5

ingredients

• 236.59 ml nonfat plain yogurt
• 1 medium cucumber, chopped fine
• 4.92 ml lemon juice, fresh squeezed
• 1 clove garlic, minced very fine
• 2.46 ml salt
• 2.46 ml white pepper

directions

1. Blend ingredients together in a jar and store in the refrigerator.
2. Use generously with falafel as well as with fresh green salads.

This was good. I think I would have prefered it run through the food processor. I used it over salad as well as a sauce for chicken.

Great dressing - so fresh and light! I used Creme Fraiche, and did not scale the recipe (there was only 2 of us). Wanted to try the leftovers as per linda shoaf. I will use it on ham sandwiches! I also had enough to mix into a Tzaziki Dip for our movie chips!!
