Creamy, Crunchy Chicken Enchilada Casserole

"I combined many parts of many chicken enchilada recipes and came up with this one. It's very versatile. You can use grilled chicken strips instead of chicken breasts, salsa instead of enchilada sauce, other flavors of Doritos, soups, or cheese. You can add corn or chopped olives. Whatever you like!"

  • 1 (10 3/4 ounce) can cream of chicken soup
  • 1 (10 3/4 ounce) can cream of mushroom soup
  • 1 (10 ounce) can enchilada sauce
  • 12 teaspoon garlic salt
  • 12 teaspoon cumin, ground
  • 1 teaspoon red wine vinegar
  • 2 cups chicken breasts, cooked and sliced
  • 1 onion, chopped
  • 1 (4 ounce) can green chilies, chopped
  • 3 cups Doritos, Ranch flavored, divided
  • 1 cup monterey jack cheese

directions

  • Preheat oven to 350°F.
  • Combine soups, enchilada sauce, garlic salt, cumin, and vinegar. Stir well and set aside.
  • Crush chips and put 2 cups of crushed chips in the bottom of a greased casserole dish.
  • Top with (in order) chicken strips, onion, green chiles, sauce (You may not need all of the sauce), remainder of chips, and cheese.
  • Bake for 30 - 35 minutes, until cheese is beginning to brown.
  • Serve with guacamole, sour cream, salsa, cilantro, whatever you like.

  1. I forgot to say before that we used our favorite generic salsa instead of the enchilada sauce. Enchiladas by themselves are pretty bland. The sweetness of some of the peppers in the salsa was a good contrast to the cumin and green chilies. I guess we modified it to Creamy Crunchy Chicken Salsa Casserole.
     
  2. I am sorry to say this didnt work as well as I was expecting for us. The recipe has everything we like but it was just ok instead of a big hit like I thought it would have been. I cooked three small chicken breasts and cut them into bite size pieces. The flavors from the sauce were spicy and rather bland. I used garlic powder instead of garlic salt because of the salt content in the soups and the Doritos. We topped with sour cream and salsa and that still didnt give much more flavor.

<p>Although I currently live just outside St. Louis, this was the 20th move my husband and I made in the 28 years (at the time of our move) of our marriage. Most of those moves occurred in my husband's 25 year career as a pilot in the Air Force. When he retired 7 years ago, he went to work for Boeing and we both thought we'd go back to Seattle and never move again. Boy were we wrong! But our eventual goal is to end up back in the northwest. Have I found the right website or what?&nbsp; Pet peeves include people who&nbsp;give low ratings but don't say&nbsp;why and people who rate recipes they haven't tried. <br />EDITED TO ADD ON Jan. 27, 2007: Well we're here! We made it back to Seattle after what I call The Move From H---! We had major problems on both ends of the move, but the worst things happened here. Less than two weeks after we moved into our new house in Bellevue, a storm blew through and sent two tree limbs through the roof! Our power was off for almost a week, so we ended up moving back into the hotel we thought we had left behind. But we're back in our house now and slowly but surely, it's beginning to feel like home. And on the sunny, warm days, we remember exactly why we've always loved Seattle so much! Our favorite restaurant (Jake O'Shaunesey's) is gone, so we'll have to spend lots of time eating out in search of a new one!</p>
