This corn recipe is very rich and delicious with no work involved. I'm always tempted to throw in some chopped sun-dried tomatoes to this dish, and probably will next time I make it.
- 4 cups corn kernels, fresh or thawed frozen
- 8 ounces chive & onion cream cheese
- 1 (4 ounce) canchopped green chilies, drained
- Preheat oven to 350.
- Mix all ingredients.
- Spoon into a casserole.
- Cover and bake for about 30 minutes.
Very simple and tasty. I served this alongside a steak and it completed the meal. Thanks Geema.

DH liked this one very much indeed, me, slightly less, but it was still an excellent recipe. I can see already this this is going to be a wonderful addition to our buffet table for the vegetarians in the family too. How easy is this? Brilliantly easy and tasty too.
