I was quite impressed with this soup. As I was cooking it, I thought it would be quite bland (because of no stock or broth) and thin and runny. After I blended it, I was pleasantly surprised. I did use fat free half and half but used the whipping cream. The texture is thin, but not too runny and it really relys on that whipping cream (so don't sub it out). The flavor is remarkable! It's a sweet, delicate corn flavor.... not bland at all. Thanx for sharing. I'll definitely be making this again.

Made for PAC, Spring 07 ~ Well, I messed up on the 'creamy' part of this soup [& probably the 'soup,' too, 'cause the final result was more like a chowder!], but it was very, very good, nevertheless! The onion & celery were not just chopped, but minced, & an additional cup of corn was added! When it came time to puree the mixture, I ran a little more than half of it through the blender, leaving the rest as it was! Will be keeping this recipe on hand, & another time I definitely want to try it as written! Thanks much for posting it!
