- 453.59 g bag frozen corn or 453.59 g bag canned corn
- 2 (793.78 g) can cream-style corn
- 113.39 g bacon, cut into 1/2 inch pieces
- 29.58 ml unsalted butter
- 1 medium onion, cut into 1/2 inch dice
- 1 large bell pepper
- 4.92 ml thyme
- 2.46 ml cumin
- 3 large potatoes, diced
- 709.77 ml chicken stock
- 14.78 ml cornstarch, dissolved in
- water
- 236.59 ml heavy cream
- 236.59-473.18 ml diced cooked ham
directions
- cook bacon until done; drain all but 1-2 tablespoons of the grease.
- add butter, onion, bell pepper and potatoes with the cumin and thyme and sautee until potatoes become tender.
- add chicken stock, cream corn, fresh/frozen corn and heavy cream.
- add cornstarch/water mixture and ham and simmer for 15-20 minutes.
