  • In a large bowl, toss together the cabbage, carrot, onion and parsley.
  • In small bowl, whisk together the mayonnaise, sour cream, pineapple juice, sugar and celery seed.
  • Toss the vegetables with the dressing and season with salt and pepper, to taste.
  • Refrigerate for at least 2 hours before serving.

  1. Yum! I made this lower carb by leaving out the pineapple juice, but used a lime mayo to get some fruit flavor and a packet of stevia to bring out the sweetness of the lime flavor. Cut the amounts back to use up a leftover portion of bagged shredded cabbage. This is really good, and when I have the right ingredients, I'll make it again (and when there are more carb eaters around). While I didn't follow the recipe as written, this recipe was the one I used with my changes.
     
  2. I didn't care for the mix of tastes in this slaw. The pineapple was definitely different. I would not make this again.
     
  3. This was a very delicious cole slaw! I did make a few changes with what I had on hand. I used the already shredded cole slaw in a bag and used celery flakes in place of the seeds. I made up the mixture (leaving out thet parsley) and let set in ref. for a hour than added the slaw and served with "Crock Pot Nc Pulled Pork" (recipe here at Food.com) My husbsand doesn't even like cole slaw and he said he really liked this one. So with that said, I will be keeping this recipe and making again in the future. Thanks for sharing the recipe!
     
  4. Very good. The Pineapple juice is not overpowering, was perfect after chilling for 2 hours. Just the right amount of sweetness. I used the package angel hair cole slaw. Family loved it thank you!

  2. Very tasty recipe. Used honey instead of the granulated sugar and sweetened pineapple juice, plus threw in 3 cut up pineapple rings. Changed to two carrots and medium head of green cabbage. Used only 1/3 cup of mayonnaise plus 1/4 cup of reduced fat sour cream. Also used about 1/8" cup of thinly sliced sweet onion replacing the red onion. No parsley and no salt or pepper. Recipe was delicious this way as well.
