From a Safeway Select recipe card. Delicious and easy!
- Bring coconut milk and 1 cup broth to a boil over high heat in a 3 or 4 quart pan (watch it because it will boil over quickly), then add rice.
- Cover and simmer until rice is tender, about 25 minutes.
- Remove from heat and let stand, covered, for 5 minutes.
The only difference here was substituting long grain brown basmati which meant it took longer to cook. Went well with your chicken and grapefruit recipe and a simple tossed salad. Reviewed for PAC 2010.
