Creamy Citrus Mayonnaise

"An outstanding accompaniment to spring vegetables such as asparagus or steamed artichokes and fish. It's really good with chilled poached salmon."

• Serves: 6

ingredients

• 3⁄4 cup mayonnaise
• 2 tablespoons frozen orange juice concentrate, thawed and undiluted
• 1 tablespoon lemon juice
• 1⁄2 teaspoon lemon pepper

directions

1. Combine all ingredients.
2. Mix well and chill at least two hours.

Very nice!! We have friends in Castroville,CA., artichoke capital of the world, and they sent us some arti's...10 for $1.00!! They are going for $2.99 a pop here in Northern CA. I have always made a lemon mayo, but the OJ was a very nice addition. I did use fresh OJ and also added 1 clove of garlic, minced. It was very refreshing! Thanks for posting Molly!
