An outstanding accompaniment to spring vegetables such as asparagus or steamed artichokes and fish. It's really good with chilled poached salmon.
- 3⁄4 cup mayonnaise
- 2 tablespoons frozen orange juice concentrate, thawed and undiluted
- 1 tablespoon lemon juice
- 1⁄2 teaspoon lemon pepper
- Combine all ingredients.
- Mix well and chill at least two hours.
Very nice!! We have friends in Castroville,CA., artichoke capital of the world, and they sent us some arti's...10 for $1.00!! They are going for $2.99 a pop here in Northern CA. I have always made a lemon mayo, but the OJ was a very nice addition. I did use fresh OJ and also added 1 clove of garlic, minced. It was very refreshing! Thanks for posting Molly!
