Found on Eating Well. Haven't tried yet, but I love salads, so I hope to try it soon,
- 1⁄2 avocado, ripe
- 3⁄4 cup cilantro, packed
- 1⁄2 cup nonfat plain yogurt
- 2 scallions, chopped
- 1 garlic clove, quartered
- 1 tablespoon lime juice
- 1⁄2 teaspoon sugar
- 1⁄2 teaspoon salt
- Puree all in blender until smooth. Adjust seasoning with salt and pepper as needed.
Love the fact that yogurt was used and not sour cream. I added lime zest and barely used any sugar. So yummy delish! Made for ZWT 2011 check out Menu #66257
This was really good dressing. I just added about a pinch of sugar instead of the full amount. The amount of lime juice in the recipe kept the avocado dressing from browning in the refrigerator. Even DH who doesn't normally eat dressing on salads liked this recipe. I will definitely make this again sometime.
I used this as a steak sauce and it was a hit! I just added more cilantro, lime juice and garlic than the recipe recommended for the flavor and consistency.
