Very aweseome. I used it as a springboard to what I actually ended up making which is why I leave no stars even though I loved it. Used a combination of home-made rice milk and regular milk, with some added soymilk when I realized that I had added faaaaar too much pepermint oil which I used instead of instant esspresso.

Years ago I made a chocolate pudding like this. I found the recipe on the back of a box of cornstarch and have not seen one since. I find it too time consuming to make a pudding with eggs and have been using the Jello CookNServe. So when I wanted to make pudding one night I did not have any more Jello pudding on hand. I decided to search the internet and found this recipe and it's wonderful!! My kids love the pudding warm, we don't wait for it to cool down. I left the espresso out, but the pudding was good without it. The taste of the pudding was much better than any box of Jello. I am going to make up a large batch of all the dry ingredients and it will be easy to just add the milk and vanilla. Great for getting your calcium!

I've made this several times and LOVE it. It is so easy and I always have these ingredients on hand. I use decaf. instant coffee and it tastes great. This is so thick and creamy but it has gotten lumpy in the refrigerator. I have been able to micro it a bit and whisk, which helps but it is best served when made (we love it really warm). Thanks Meryl! Roxygirl

No doubt, this is an excellent recipe :) No one could go wrong making this! I've just had my share and wow! Once chilled and ready to eat, I topped the puddings with diced bananas and strawberries. All the bowls have been licked clean (by adults!). Thanks for the recipe, it's a keeper!

O.K. I have just had the most incredible, tasty chocolate pudding ever! I have been a chocolate pudding fan since I was a child and this reminds me of the delicious pudding my Dad used to make when I was a little girl. Meryl thanks for the great recipe! It's a keeper!

I omitted the instant coffee, used skim milk, and used regular Hershey's Cocoa (not Dutch process) and this was still fabulous! You can't beat a tasty fat free pudding! Just as a side note, don't bother measuring out 10 Tablespoons of sugar. It equals 1/2 cup plus 2 Tablespoons.

OMG--This is SOOOO GOOD! I had this craving for chocolate and it wouldn't go away. Problem is I haven't gone shopping, so the pickin's are slim... only 1c. of 2% milk left so I used 1/2 c. vanilla caramel coffee creamer and topped it off w/ water to make the 2c. This pudding is so sinfully lucious! Problem is now I might have to get more vanilla caramel coffee creamer ;) This is going in my favorites cookbook...I can so picture it as a pie! Thanks so much for sharing!

Very rich, very fast and easy and very, very good! Thanks for a great recipe. I have to admit, I ate one serving hot...couldn't wait for it to cool down. This is easier than the boxed mix ... you're not stirring as long. Thank you!

Yummie! I was watching tv, and saw someone eating chocolate pudding. Then remembered that my grandma used to make it herself all the time, so I ran to the computer to visit this website and found your recipe in 1 minute. Had everything on hand and made a double batch right away. It was amazing, and have to admit guilty in not even waiting untill it was cooled down! I loved it warm as well. Will eat the leftovers cold today. Thank you so much!

I was really craving chocolate pudding and decided to give this recipe a try. I am so glad I did. I left out the coffee because I didn't have any and I doubled the recipe. I used regular cocoa because I don't have "dutch" processed. I will try it again with the proper ingredients but I have a hard time believing that it could really get any better. Thanks for the awesome recipe.

These cornstarch based puddings have been made in Scandinavia since my Grannies times, and they are back in fashion since people have remembered how nice and low in fat they are. And this is really delux recipe with a hint of coffe in it. A keeper!

Deliciously creamy and chocolate--I will never use instant pudding again when I can have this instead. We all love this recipe. I didn't have any instant espresso or coffee, so I had to omit that ingredient.

This was actually a very good recipe. I thought that the sugar or cocoa might be too overwhelming in this recipe, but it's very well-balanced. I made it with homo milk and it was SOOO creamy. I didn't really taste the instant coffee, so maybe next time I won't use it. I also put in some white chocolate for some cocoa butter. Thank you very much for this recipe!

This was a nice ending to what would have otherwise been a plain dinner the other nite. I really recommend using Splenda as it does cut the calories and since I never tasted it with regular sugar, I didn't miss a thing! This is certainly woth keeping and repeating.
