Creamy Chicken Taco Soup

- 907.18 g chicken thighs, bone-in
- 396.89 g chicken broth, canned (or homemade)
- 283.49 g beer
- 2 stalk celery, sliced
- 1 onion, medium, diced
- 425.24 g black beans, canned, drained and rinsed
- 283.49 g Rotel Tomatoes, with chilies
- 425.24 g diced tomatoes, canned
- 28.34 g taco seasoning mix, 1 pkg
- 226.79 g fat free cream cheese, cubed
- 709.77 ml brown rice, cooked (optional)
- tortilla chips, crushed (optional)
- cheddar cheese (optional)
directions
- Remove skin and visible fat from chicken thighs. Place in crock pot with broth, beer, celery and onion.
- Cook on high 2 hours or till chicken is done. Remove chicken from crock-pot and allow to cool. Remove bones from chicken thighs and chop meat to desired size. Add diced chicken back to broth in crock-pot. This step can be done ahead of time and refrigerated overnight. Then in the morning, skim off fat collected on top and allow crock to sit for 30 mins at room temp before turning on and adding other ingredients.
- Add beans, tomatoes, and taco seasoning package. Return crock-pot to low for up to 8 hours or high for as little as two hours.
- 30 mins before serving add cream cheese to crock-pot and put on high. Stir well before serving, breaking up large pieces with back of spoon. If you are adding rice, do so now and allow to heat thru for a few minutes.
- Top with crushed chips and cheese.

<p>First, I'd like thank everyone who reviews my recipes. I can't thank each of you personally although I try. <br /><br />I Live in central Virginia, 5 miles from where I grew up, w/ my Husband of 17 years and my beautiful daughter. She is 10 and is the joy of my life. We waited for a long time to be blessed with a child and it is the best thing I've ever done. Be a mother. <br /><br />I love to cook. We eat very healthy, after a life altering experience at 31 I've been on a journey to be healthy and lose weight. I've lost 50 lbs and have kept most all of it off for the last 9 years. There are always fluxs, durring stressful times, but I've mananged to keep most of the weight off. My best advice to anyone trying to lose weight is to remember that it didn't get there overnight and it won't come off overnight. I've never said I was on a diet. It is a lifestyle.</p>
<p>When Zaar first changed to Food I took a short hiatus. I was going thru a very hard time in life and was completely unmotivated to do anything and thus gave up my hosting duties on Holiday Tag. But now with a new perspective I'm hoping to get back to cooking and tagging.</p>
