I decided to make this spur of the moment for company coming. I luckily had all the ingredients, except the "cream of" soups, so I whipped up a homemade version of that and threw everything else together. I was a little concerned initially, as this recipe has more ingredients in it than other similar recipes I've eaten in the past. But even as I was assembling it in the pan I could tell it was going to be good. I am NOT a fan of "cream of" dishes, but I liked this one, especially with the homemade soup I used. My family and friends all liked it and the kids ate well, except for the one who picked out all her mushrooms first...

I've been making this using Nimz's Creamy Chicken Spaghetti (Lite-Bleu) but not using "lite" ingredients - I just realized I never reviewed the actual recipe! LOVE this, don't change a thing! It's comfort food at it's best. It freezes well, reheats well... it's so versatile, I use it for potlucks, friends who have had babies or are sick or need a meal for whatever reason, and I keep one in the freezer just in case. Thanks, this is a staple in our house!

Wow! This is wonderful! I made 3 8x8 pans to take to my son in college - one to eat and two to freeze. He said he absolutely loved it and will gladly eat it anytime I'm willing to make it. This will be the only chicken spaghetti recipe I will ever use.

DH and I really love this. He believes it would be a fantastic potluck dish since it makes a gigantic amount and appeals to most tastes! Otherwise, this is a very nice family-style casserole with plenty of leftovers. I used the Rotel tomatoes which added the "kick" that another reviewer mentioned; I don't think this dish would be as great without the kick! Thanks, Nimz! Made for Potluck Tag.

This is a great recipe! I did use a rotisserie chicken as a previous review suggested. It was easy to throw together and just a great tasting dish. I like that it makes a lot--leftovers for lunch this week for the whole crew. Thanks Nimz for this keeper.

We made this for the "Make It Healthier" tag game. We brought it down to 346 calories and 12.8 grams of fat. We omitted the olives, red pepper, and can of cream of mushroom soup as well as used reduced-fat items and changed the quantity of some items as well. The Rotel tomatoes were only found with chilis and this gave it quite a bit of heat. The Cream of chicken soup we used did tone that down, but next time we would use regular chopped tomatoes. Great dinner, Nimz!! Lots of great flavor. We left out the mushrooms, peppers, and olives due to family tastes but this was wonderful!! Definitely will be having this one again! Thanks, Nimz!

We enjoyed everything about this chicken recipe - all of the vegetables just make it so tasty. I did use a rotisseri chicken from my grocery store to make it easier. The flavors are delicious and I will definitely be making this one again.

Fabulous, flavorfuland fast dish to pulltogether! I changed the serving size to 2 and made this as directed with the following exceptions: I could not find my olives (tore my pantry apart for 30 minutes and finally found them AFTER baking the dish), I used about half a red bellpepperand no green as I was out of green today, also used up some red onion instead of the yellow, and I used the whole can of Rotel (it changed for the smaller portion, but I wanted the flavor). I also added a few marinated artichoke hearts since I was lacking the olives and green peppers. Definite keeper- both of my kids ate it tonight as DH was out at a meeting this evening. Thanks Nimz!! I will make again with the black olives!!!

I absolutely loved this! It's so quick and easy to put together with fantastic results! I had to make this in a hurry so I used 1 lb. grilled chicken strips from Costco and pre-sliced mushrooms. I left out the bell peppers since I don't like them when cooked and added 1 4 oz. can of diced green chiles. This recipe makes a ton of food so it is perfect for a large family. Thanks for posting this wonderful recipe, Nimz! Into my "Tried and True" cookbook it goes. :)
