This is our family's favourite chicken soup - it is thick, healthy and hearty. This is always a favourite with friends when they come visit during winter - fills you up and keeps you warm!

Directions

  1. Melt butter.
  2. Saute onions, carrots and potatoes.
  3. Add flour and mix.
  4. Blend in stock.
  5. Bring to the boil and simmer covered for 45 minutes.
  6. Liquidise and add milk, chicken and seasoning.
  7. Bring to the boil and simmer for 5 minutes.
  8. Add parsley before serving.
