Creamy Chicken Skillet With Stuffing

- 1 (6 ounce) package herb stuffing mix
- 1 1⁄2 cups water
- 1⁄4 cup margarine
- 4 boneless skinless chicken breasts
- 1 (10 1/2 ounce) can cream of chicken soup
- 1⁄2 cup water
- 3 cups frozen mixed vegetables (corn, peas, beans, carrots, etc.)
directions
- Bring 1 1/2 cups water and margarine to boil in medium saucepan. Stir in dry stuffing. Cover and remove from heat. Let stand.
- Cook chicken breasts with a little water in large skillet on medium high heat, about 5 minutes each side. Remove from skillet.
- To same skillet add soup, water and vegetables. Cook about 6 minutes. Return chicken to skillet to heat.
- Fluff hot stuffing with fork and serve smothered in chicken and vegetable mixture.
