I absolutely don't mind using something like Calvados in a recipe when I know that the alcohol will burn off leaving a great fruity flavor behind! Made this recipe exactly as given & we had an absolutely wonderful new way for me to make this kind of chicken soup! Definitely a winner & a keeper of a recipe! Love leeks, love apple in savoury dishes and just LOVED this soup. I couldn't find calvados (but I shall continue looking for next time I make this) so I simply added some white wine. I used a low-sodium chicken stock and low fat cream but otherwise made this exactly to the recipe. Apart from having used three leeks and being determined to track down that calvados, I wouldn't want to change a thing in this recipe: a great balance of flavours and textures. Thank you so much for sharing this recipe. Made for PRMR.

This is a beautiful and tasty twist on an old favorite soup. The addition of apples and cider gives it a delicate sweet under-tone and the cream and cheese goes nicely with that. We'll definitely have it again, thanks for sharing. Made for Photo Tag game.
