      Loved this soup! I added 1 small onion and sautéd it with the other veggies in butter. instead of using the already made chicken I cooked my own. I used boneless chicken thighs and added a little thyme, rosemary, basil, 1 bay leaf, salt and pepper to taste. then used the stock for the soup and added some more water, salt, and pepper to taste. after it started boiling I added the dumplings.(cooked everything liked the recipe but only used half of the dumpling otherwise its a little too much.) to make it thicker to your taste in a separate cup I mixed about 3/4 to 1 cup milk with 3-4 heaping tablespoons (the kind you use to eat) of flour mixed with a whisk so there wouldn't be any clumps and added it to the soup little by little while stirring till I got wanted consistency. at the very end I added the chicken. I made this soup when my sister came up to visit and she had 3 bowls of it. and shes a very picky eater! my mom loved it to she said "it's addicting."

      The stew is tasty but not nearly thick enough for a traditional chicken and dumpling. I ended up having to throw the original stew out, start over again and use 1/3 c. flour. I also added a medium chopped onion and a tsp. thyme.

      My family enjoyed this and we will make again. My timing was a little off, as it took longer than posted. I also had to use more flour to get my sauce thicker, but otherwise the taste was great. My family loved the dumplings. Very light and fluffy.

      This is a very good recipe. I made it for my husband because he LOVES chicken & dumplins'. Being a northern girl, I usually don't care for it that much. To add more flavor I jazzed it up a bit with more garlic, extra salt, & quite a bit of pepper. It was really very good--I loved the smell of it stewing! This was a great way to make the most of my leftover meat on a roasting chicken. I will make it again!
