These mashed potatoes are devine but so not low in fat at all!

  1. PLACE potatoes in large saucepan.
  2. Cover with water; bring to a boil.
  3. Cook over medium-high heat for 15 to 20 minutes or until tender; drain.
  4. RETURN potatoes to saucepan; add evaporated milk and butter.
  5. Beat with hand-held mixer until smooth.
  6. Stir in cheese.
  7. Season with salt and pepper.
  8. NOTE: Chopped green onions, chopped parsley or cooked, crumbled bacon may be added to mashed potatoes.
