A tasty no oil-no sugar salad dressing from Joel Fuhrman's The End of Diabetes. Delicious served over a green salad.
- 2 cups frozen blueberries (thawed) or 2 cups fresh blueberries
- 1⁄2 cup pomegranate juice
- 1⁄3 cup raw cashews
- 6 walnut halves
- 2 tablespoons wild blueberry vinegar or 2 tablespoons white wine vinegar
- Combine all ingredients in high-powered blender or food processor and blend until smooth and creamy.
