Loved this! It went really well with flour tortilla chips, and it was so easy to make. The flavors all complement each other so well. The hardest part was convincing DH to part with one of his Heinekens lol! I told him "don't worry, you'll get it back, just slightly altered". I recommend shredding brick cheese for this, because sauces made with packaged shredded cheeses have a tendency to be somewhat grainy (not sure why, maybe because the extra surface area of the cheese allows it to dry out more?). Thanks for posting! Made for ZWT4

I did the recipe for 4 servings. We were only 2 to eat it. There was no leftover LOL He asked me to do it again. Probably tomorrow. We won't buy cheddar dip for tostitos anymore. He never tells me a star rating to put but for this one he told me 5 stars. So that means, it's very great. I used a grainy dijon mustard, Stella Artois beer. Thanks Kelly :) Made for Bevy tag

This was just okay. Maybe it was because I used light beer, but even then, the beer overpowered the good sharp cheddar that I used. A little odd because I like the taste of cheddar with beer. Next time, I will try a different recipe.

Really creamy dip! Served this today with assorted crackers and veggies for a cookout and my guests loved it! I was hoping for leftovers but they cleaned it out! I only had regular horseradish and it turned out just fine! Made for ZWT4.

ZWT4: This is an awesome dip!! I followed the tip from Muffin Goddess's tip about shredding the cheese and it turned out perfect!

Mine didn't turn out anything like the other reviewers have posted. It was fairly grainy. The flavor was interesting, not bad. I served this at a small gathering at my house, and while some people really liked it, it was one of the dishes on the buffet with quite a bit left in it. I wanted to like this a lot more. I will say, though, that this PERFECTLY fit in my Crockette (1 qt. crockpot). If someone is looking for recipes that can go in their Crockette, and can get it smooth and creamy, this would be an excellent recipe for their cookbooks.

When I first made this I thought it was missing something. I went back and reread the ingredients and found I forgot the horseradish and mustard. This really adds to the dip. I made this for ZWT 4 and DH says it needs to be a regular in our house. I am adding it to my fondue recipes too.
