- 473.18 ml dried great northern beans
- 29.58 ml olive oil
- 295.73 ml onions
- 3 garlic cloves (diced)
- 236.59 ml carrot (diced)
- 118.29 ml celery (chopped)
- 3.69 ml marjoram
- 1.23 ml sage
- 1.23 ml thyme
- 2 bay leaves
- 709.77 ml vegetable broth (or chicken)
- 709.77 ml water
directions
- Soak beans until doubled (into 4c.).
- Saute onion, garlic, carrots, and celery in oil until tender.
- Add water and broth, boil for 2 minutes.
- Add beans and spices, simmer until beans are tender.
- Remove bay leaves.
- Puree 2/3 of soup in blender or food processor, then combine with remaining soup to serve.
