Creamy Asparagus Soup

  • Cut asparagus into 1 inch chunks.
  • Place chicken broth in pot and add asparagus chunks.
  • Bring to a boil and simmer five minutes until tender.
  • In a small saucepan, melt butter and saute shallots and garlic for five minutes.
  • Add flour and cook for one minute.
  • Add flour mixture to chicken broth and stir until thickened.
  • Blend soup in blender until semi-smooth.
  • Return to pan and add half& half, thyme, and pepper.
  • Simmer for five minutes.
  • Add parmesan cheese until melted.
  • Season with additional salt and pepper if desired.

  1. This is really a great asparagus soup; I followed everything except the thyme; we don't care for it; but that parmesan at the end bring it up a few notches; thanks or posting.
     
  2. What a delicious soup. I used less thyme as I wasn't sure I'd like it, but it was a fine addition. Good without the cheese, but excellent with it!
     
  3. So quick and so simple. I did also boil a little longer than stated, but the end result was fantastic. This is a great tasting soup and I just loved it.
     
  4. Very nice and simple recipe. I had to add almost a full cup extra of broth, the soup was just to thick! I would also add less thyme and a bit of salt next time. I used non-fat half and half. Thanks beckas!

Tweaks

  1. We really enjoyed this soup. I used evaporated milk instead of half-and-half, reduced the chicken broth by a cup and increased the milk by a cup so I didn't have to deal with half a can of each left over. I also simmered the asparagus longer than five minutes because I was involved in other dinner preparations.

I love Recipezaar! I have found many great recipes on this site! Since I've found zaar, I've been spending more time making recipes from zaar than I have from my dozens of cookbooks. What can I say....zaar members post darn good recipes! I wish that I could spend more time cooking but I tend to keep meals simple because I work full time as an Microsoft Exchange E-mail Administrator and I spend the rest of my time taking care of my three year old toddler.
