  1. melt butter over medium heat.
  2. add onions and cook until soft.
  3. Add the flour, stir until golden brown.
  4. Add the half and half.
  5. Simmer until sauce has thickened enough to coat the back of a spoon.
  6. Add the spinach in two parts, covered, each for four minutes.
  7. Stir until wilted.
  8. Add salt, pepper, and nutmeg.
  9. Use a stick blender to lightly puree.
  10. Dot with remaining butter.

I'm sorry but this recipe just did not work for me,maybe I did something wrong, But I followed the recipe sauce did not thicken enough,and my spinach was still tough. Again I am sorry,darlene
