Good comfort food. Also great for breakfast, or a perfect side dish.
- 1 cup creamed corn
- 1⁄4 cup melted butter
- 2 beaten eggs
- 1⁄2 cup yellow cornmeal
- 1 teaspoon salt
- 1 cup sour cream
- 1 cup diced cheddar cheese
- Preheat oven to 350F and grease an ovenproof casserole dish.
- Combine all ingredients and pour into prepared dish.
- Bake in oven 1 hour or until cornbread tests done.
This went great with BBQ. It's a lot like a mexican casserole we make, but awhole lot less work. Thanks Mirjam, I'll keep this one around.
