A friend had an Italian Buffet, so I made this combination to simulate Italian Cream Sodas after reading many punch recipes. I was going to make an ice ring but never got a mold or pan to suit it ... so made ice "muffins" instead. It turned out VERY yummy and I had 3 requests for the recipe!! My very first invention! :D Cooking/prep time does not include freezing the ice. P.S. They had about a 1 gallon punch bowl, so I did 1/2 the recipe to start, then had some to refill when everyone kept emptying the bowl!

Ingredients Nutrition

  • 12 (12 ounce) cansblack cherry citrus Fresca soda
  • 3 cups vanilla ice cream (Use Dreyer's Cherry Vanilla ... it is yummy!!)
  • 2 (12 ounce) cans frozen juice concentrate (Safeway brand Berry Punch)
  • 6 (12 ounce) cans club soda
  • maraschino cherry
  • For the Ice Muffins or Ring

  • 1 (12 ounce) can frozen juice concentrate (Safeway brand Berry Punch)
  • water
  • maraschino cherry
  • lime slice
  • lemon slice

Directions

  1. Put the ice cream in the bottom of the bowl. Then put the frozen concentrated juice on top. Mix these together as well as possible.
  2. Pour in the sodas in any order. The ice cream and soda will make this beautiful huge poof.
  3. Mix with the serving spoon.
  4. Drop in cherries and ice ring/muffins as desired.
  5. TO MAKE ICE: Make the juice with water as directed, but adding more water than asked for.
  6. Pour into mold/muffin pan and add fruit as desired.
  7. Freeze.
