Cream Sandwich Cookies

We had these at a beautiful bed and breakfast in Berlin, Ohio..I am forever indebted to our lovely hostess for this recipe..awesome sandwich cookie

• Total Time: 22 mins
• Prep Time: 15 mins
• Cook Time: 7 mins

Ingredients:

Yield: 3 dozen

• 1/2 cup butter
• 1 cup brown sugar, packed
• 2 large eggs, beaten
• 1 teaspoon vanilla
• 1 teaspoon cinnamon
• 1 teaspoon baking soda
• 2 3/4 cups flour

FILLING

• 4 tablespoons butter, softened
• 1 -2 tablespoon half-and-half
• 2 cups powdered sugar
• 1 teaspoon vanilla

Directions:

1. Mix in order given, combine well.
2. Put cookie mix in a cookie press and put strips on cookie sheet.
3. Bake at 350° for 7-8 minutes. Do not overbake.
4. Cut into cookie pieces.
5. Put filling between 2 cookies to form a sandwich.
6. To prepare FILLING INGREDIENTS:.
7. Beat filling ingredients till smooth about 4 minutes.

Ths missing star is simply a matter of personal taste, they were very sweet. Otherwise they are lovely! I added lemon juice to the filling in place of cream and that helped a lot. The texture is perfect. I rolled out the dough and made 1 inch round pudgie cookies, very cute and irresistable!
