  • Preheat oven to 350 degrees.
  • Mix together sugar, salt and cornstarch. Add milk and corn syrup, cooking on medium heat until thick.
  • Temper the egg yolks by stirring in a little of the milk mixture at a time into the beaten egg yolks. Add egg yolk mixture back to milk mixture and cook 3 minutes, stirring constantly.
  • Remove from heat and add butter and vanilla, coconut or banana.
  • MERINGUE.
  • Beat egg whites until stiff. Add sugar slowly, continuing to beat.
  • When stiff, put on pie and bake pie for 12 - 15 minutes.

  1. My mom is not feeling well and coconut cream pie is her favorite. She said it was the only thing that tasted good to her and she loved it. I used Pillsbury's refrigerator pie crust and had trouble with my meringue so I topped the pie with some coconut. Very easy to make and cant wait to try it with bananas.
