- 1 (8 inch) pie crusts, cooked

CREAM FILLING
- 1⁄2 cup sugar
- 1 pinch salt
- 3 tablespoons cornstarch
- 2 cups milk
- 1⁄4 cup corn syrup
- 3 egg yolks, beaten
- 2 tablespoons butter
- 1 teaspoon vanilla
- 1⁄2 cup coconut or 3/4 cup banana, sliced

MERINGUE
- 3 egg whites
- 1⁄2 cup sugar
directions
- Preheat oven to 350 degrees.
- Mix together sugar, salt and cornstarch. Add milk and corn syrup, cooking on medium heat until thick.
- Temper the egg yolks by stirring in a little of the milk mixture at a time into the beaten egg yolks. Add egg yolk mixture back to milk mixture and cook 3 minutes, stirring constantly.
- Remove from heat and add butter and vanilla, coconut or banana.
- MERINGUE.
- Beat egg whites until stiff. Add sugar slowly, continuing to beat.
- When stiff, put on pie and bake pie for 12 - 15 minutes.

My mom is not feeling well and coconut cream pie is her favorite. She said it was the only thing that tasted good to her and she loved it. I used Pillsbury's refrigerator pie crust and had trouble with my meringue so I topped the pie with some coconut. Very easy to make and cant wait to try it with bananas.
