This is a rich, hearty soup that tastes great on a cold winter day. Serve with crusty bread and a glass of wine!

  1. Saute rice, onion, celery, carrots and bacon in butter until crisp tender, 3-4 minutes; stir in stock and herbs, bring to a boil, reduce heat and cover; simmer until rice is tender,40-45 minutes.
  2. Stir in cream.
  3. Knead together the flour and butter for the beurre manie and whisk the mixture into the soup until soup thickens; season; add more stock if soup is too thick.
  4. Serve hot.

This was excellent! I've been searching for good cream based soup recipes and this one was wonderful. I did add the cooked chicken as well and added the spices that came with the rice instead of the spices listed. Will make again! Thanks for the awesome recipe. :)

Very good. I altered it somewhat by using part half and half, added some white rice, & some chicken. We enjoyed it very much!!
