Homemade soups are the best, and sweet potatoes are nice change to regular old potato soup.

  1. Preheat oven to 375°F.
  2. Bake the sweet potatoes for 45 minutes or until they are soft Cool the potatoes until they can be handled.
  3. Peel away the skin, then put the potatoes into a large bowl.
  4. Mash the potatoes for 15 to 20 seconds, but you do not need to mash them until they are entirely smooth.
  5. Spoon the mashed sweet potato into a large saucepan over medium/high heat, add the remaining ingredients and stir to combine.
  6. When the soup begins to boil, reduce the heat and simmer for 50 to 60 minutes.
  7. Cashews should be soft.
  8. Serve piping hot.

When I first saw this recipe, I thought this was a joke. Then someone showed me the Seinfeld episode w/the soup n' guy. Then we went to his soup stand on our trip in NYC, on West 55th Street. I ordered this same soup and my friends ordered goulash, and cuban black bean. I remembered seeing this recipe here, and decided to give it a try. It doesn't taste exactly like the real guy's soup on West 55th Street. (All his soups seem to be really spicy, even this one with the sweet potato. I tasted my friend's soups too. All of them were very, very spicy. I don't even know what spices he uses - but it's wonderful, the best soup in the world no doubt). This recipe is much more mild but still delicious. Only it really doesn't taste like his exactly. Unless maybe he changed his recipe and made it more spicy. That's just my opinion. V. Good soup!

I cheated with this a little because of time, boiled the sweet potato and then pureed. Did add a little chicken stock and a dash of chilli flakes. Better than I anticipated, thought it might it be too sweet for my taste. The thyme added a nice touch.

I found this soup to be missing something. I played with the seasonings a bit by adding more pepper (another 1/2 tsp) and some powdered vegetable stock (3 tsp). These additions bumped the flavour up a notch or two turning a fairly plain soup into a real Soup Nazi contender.
