Cream of Peanut Soup
- 1 tablespoon butter
- 3 tablespoons peanut butter
- 1 teaspoon onion, minced
- 2 tablespoons flour
- 2 cups milk, scalded
- 1 cup chicken broth
- 1 tablespoon milk, for dissolving the flour.
- Cook onions in butter and peanut butter for 5 minutes.
- Dissolve flour in 1 T milk.
- Add to pan and stir until smooth.
- Add scalded milk and chicken stock.
- Season to taste.
- Cook in double-boiler for 20 minutes.
- Optional: top with chopped peanuts.
