This is unbelievably delicious, and in my version, I lowered the fat significantly. I replaced the margarine with 2 tablespoons olive oil and 2 tablespoons of Brummel and Brown. Then, instead of the milk and cream I used 2 cups of nonfat milk mixed with 2/3 cup of nonfat instant powdered milk.

Heart Warming! I used a mixture of mushrooms dried as well fresh. The hand blender works great in this.I used ground fresh nutmeg instead of mace. And swirled some sherry into each bowl. Thanks for posting this yummy soup recipe.

I made this to substitute for cans of cream of mushroom soup used in chicken noodle casserole. I did add all the mushrooms at once and pureed them all so my kids wouldn't know and complain. They loved the dish and the "sauce" that was on the noodles. I ate some of the soup for dinner the next night and it was tasty by itself. I left out the mace since I didn't have any.

My daughter loves Cream of Mushroom Soup and had been asking for it lately, but I kept forgetting to buy it. I decided I would make her some soup from scratch and decided on this one. It was fabulous and I just cannot stop eating it. It is just the right consistency, and while I thought the onion flavor was too strong at first, I have changed my mind and think everything is perfect. The only thing I changed was to add about 3/4 c of white wine. It gave it that extra touch. We'll be making this from now on. Thanks so much!

I love Cread of Mushroom soup! This recipe was very good. However, I customized this recipe as follows: 3/4 large onion, finely chopped, deleted the mace and lemon, added 1/2 tsp. Tarragon and 1/2 C. White Wine. This was truly the best soup I have made. Thanks for sharing...

Really delicious stuff! And here I thought cream of mushroom soup was just to be used as an ingedient in other recipes, which is why I made it, but boy was I wrong! No more MSG-filled Campbells for me!

Excellent soup Marg, Jack says"grrreat" another good one from our Country Lady. I used a mixture of cremini, shitake, and oyster mushrooms, great flavor, easy to make.

Excellent soup Marg! I made this yesterday morning, left it in the fridge to have for dinner last night. I went to purchase fresh mushrooms just to make this recipe LOL...I love mushroom soup, this was delicious! I'm looking forward to have the remainder tonight, thanks so much...Kitten:)

Very good soup! As I used a chicken stock that had onions in it, the onion taste was a little strong so I will adjust the amount of onions in my next batch of soup. Used Shitake. Love in little mushroom bits. No lemon (Hubby's request) and didn't use cream as I had to reheat it for the next day. Thanks for posting!
