Hello Cooking202; As they say, "this cake is to die for". The best coconut cake that I have ever had. Tried many different coconut cakes in Hawaii and they were also good, but do not compare with yours. For those who enjoy a good coconut cake, don't wait any longer, make it now, you will not be disappointed. Thank you for sharing this recipe, it is number one on my list. "Uncle Bill"

I made this cake in order to celebrate my boyfriend's birthday at his life group meeting, it was a hit! At first he thought it was from a bakery. There was not one piece left. I've made it four times after that. It helps to let it soak overnight with the cream of coconut and when I bake it I take it out when it just starts to get golden so it can be moist not dry (my oven cooking time is shorter than the instructions). Thank you soooo much for this easy & awesome recipe!!!

I made this for Easter and well received by all except people who did not like coconut. I did not add extra sugar to the frosting and this cake was very much an Easter treat.

Mmmm... this may be one of the best cakes I've ever had. I love the rich, dense, moist texture of the cake. It is intensely coconutty, and the slight tang of the sour cream in the frosting is the perfect complement. Fantastic.

Love this cake!! I made this for Mother's Day and it was delicious! The only changes I made were to use a butter flavor cake mix and I baked it in a 13x9 inch pan. It's so moist and flavorful and not overly sweet. I think this definitely needs to be made ahead of time, because the frosting needs time to blend together so that it doesn't taste sour creamy. I toasted a little extra coconut on the stove in a frying pan for a few minutes to give it a little extra color and it looks beautiful!! Thanks for an easy and delicious recipe!!

Awesome cake, awesome frosting. I wasn't able to find cream of coconut so I used a bit of sweetened condensed milk instead. Thanks for the great recipe! I made it for my best friends birthday and she loved it.

Delicious and not too sweet at all. Everyone loved it. Made it for husband's birthday cake and he had 2 pieces. I did make it a couple of days in advance to "age". Thanks for an EASY and delicious coconut cake recipe!

Wow is right!! This cake is excellent - looks beautiful, tastes wonderful, and is simple to make. Mine crumbled a bit when cut but it may have been the skewers I poked it with. Next time (and there will be a next time) I will try poking it with toothpicks.
