Cream of Celeriac Soup With Bacon

- 2 celery root (buy with leaves still attached if possible)
- 6 slices bacon, sliced into 1 inch pieces
- 1⁄2 cup heavy cream
- 2 tablespoons olive oil
- 3 cups water
- salt and pepper
directions
- If you have te leaves, remove a few of the tender, light green leaves and set aside.
- Peel celery roots.
- Wash and cut into 1-1/2 inch cubes.
- Put the celery root, water and salt into a large saucepan and bring to a boil.
- Lower the heat and cook until the celery root is tender, aprox.
- 35 minutes.
- While the root is cooking, heat 1 Tbsp of olive oil in a skillet.
- Add the bacon pieces and saute until the bacon is crisp and golden.
- Remove to paper towels and drain.
- Wash and dry celery leaves.
- When the celery root is tender, pour into a blender with all the liquid and process until smooth.
- Add heavy cream and remaining 1 Tbsp olive oil seperately, blending well after each addition.
- Pour soup back into pan and reheat.
- Ladle the soup into warm bowls and garish with bacon and celery leaves.
- Serve right away.

I'm a full-time student at a University of Wisconsin campus, with a double major in Sociology and History. I have three adorable children, ages 9 yrs, 5 yrs, and our 2 yr old son. My nine yr old is in third grade. My 5 yr old is is in kindergarten. My littlest one is pleasantly plump. ;) We also have 2 cats.

I also really like sewing. I make @ 1/3 of my daughters clothes. Reading is also a BIG staple in my life. One of my favorite ways to find a book is to walk into the library, pick a shelf and simply grab a book at random. I've read so many great books I probably wouldn't have found out any other way.
I also like to camp and fish with my DH. He eats, sleeps and breathes fishing. He would like to one day start his own company, he hand ties and sells fishing lures locally. And he loves my cooking and will try anything at least once. ;)
He works as a pressman at a local printing company.
